1 Medium Sweet Potato
1 Apple Chicken Sausage Link (or you can use any chicken sausage flavor you prefer)
1 Teaspoon Coconut Oil
2 Tablespoons Water (you can add more as you cook your sweet potato)
Goat Cheese for topping (optional)
Cut up sweet potato into chunks. Place in a pan with coconut oil and water. Cover and let the potato steam until soft, tossing to avoid burning (I've made that mistake a time or two). Push the potato to the side of the pan and add the diced chicken sausage. Cook chicken all the way through. Sprinkle garlic powder, onion powder, and pepper on the potatoes and chicken, and lightly toss.
Transfer the potato and chicken mixture onto a plate.
Lastly, you will cook the egg. Typically you would make an over easy egg, but I prefer scrambled. Place the egg on top of the potato and chicken mixture. If you like, add a little sprinkle of goat cheese and enjoy.
If you are trying to consume more veggies, try adding roasted brussel sprouts to the hash. I've done that before and it was delicious!
