Peanut Butter Energy Bites

 We love this delicious snack in our household. It's clean, healthy, and the kids love helping me put them together. They make a great after school snack too!



Yields about 14  (I normally double the recipe because they go fast!)


1 Cup Quick Oats

1/2 Cup Peanut Butter (I do 1/4 peanut butter, and 1/4 peanut butter powder to cut back on fat and calories)

1/3 Cup Raw Honey

1 Cup Unsweetened Coconut Flakes

1/2 Cup Ground Flaxseed

4 Tbsp. Chia Seeds

1/2 Cup Mini Dark Chocolate Chips

1 Tsp. Vanilla

Optional: Slivered almonds, raisins, other add ins




Combine dry ingredients into a large bowl. Stir. Add wet ingredients. Mix well. Place in the refrigerator for 15 minutes. Remove from fridge and roll mixture into small balls. Store in an air tight container in the refrigerator.
